How to Prepare Turkish Coffee
The coffee and sugar should go into the kettle before any water. Reduce the heat as much as possible. Start the burner and stir the soup. You are thereafter permanently banned from stirring the coffee. In about a minute, foam will begin to accumulate there. Take some of the foam into the cups as it becomes thicker and deeper in colour. Quickly (before the coffee boils over), remove the pot from the heat and transfer the remaining coffee to serving glasses. First, divide the coffee halfway between four cups, then fill each cup with the remaining coffee in the pot.
